Tiramisu (birthday cake version)
Introduction:
"This is a tiramisu birthday cake. Although the steps are complicated, once it is finished, it still has a sense of accomplishment."
Production steps:
Step 1: make sponge cake and separate 6 egg yolk proteins.
Step 2: whisk the protein to the dry hair, add Tata powder and 1 / 3 sugar during the whisking.
Step 3: pour the remaining 2 / 3 sugar into the egg yolk and mix well with the beater.
Step 4: after the egg yolk is whipped to light yellow, add two tbsp of water to mix well, then sift the low gluten flour, baking powder and salt into the light yellow paste, and stir well.
Step 5: add the whipped protein into the egg yolk flour paste.
Step 6: mix well. (avoid defoaming)
Step 7: pour the batter into the 8-inch cake mold and bake in the oven preheated to 180 degrees. (baking paper should be put on the bottom of the mold to avoid sticking to the bottom)
Step 8: bake for about 35 minutes and let cool.
Step 9: demoulding
Step 10: cut the cake small and cut off the edge about 1cm.
Step 11: now make the cheese paste. Beat the cream first.
Step 12: mix the cream cheese, 4 egg yolks, powdered sugar and honey together.
Step 13: mix the whipped cream into the whipped cream cheese.
Step 14: add 50g rum to 150g coffee.
Step 15: add 1 teaspoon of coffee wine to the cheese cream paste and mix well.
Step 16: dissolve the fish glue powder in hot water.
Step 17: cut the sponge cake in half and put half into an 8-inch cake mold.
Step 18: Sprinkle half of the coffee wine evenly on the cake.
Step 19: dissolve the ground fish glue powder and quickly mix it into the cheese cream paste.
Step 20: pour half of the cheese cream into the cake mold.
Step 21: (sorry to forget to pad baking paper around first, and now fill it up.)
Step 22: prepare some finger biscuits for decoration. (optional)
Step 23: place finger biscuits along the cake mold. (if there is no finger biscuit, this step can be saved)
Step 24: put on another piece of cake and drizzle with the remaining coffee wine.
Step 25: pour in half of the remaining cheese cream.
Step 26: smooth the surface as flat as possible with a shovel.
Step 27: refrigerate for at least 5 hours. (I put it all night)
Step 28: demould.
Step 29: put on the cut words.
Step 30: Sprinkle with cocoa powder.
Step 31: remove the words carefully.

Note: because it is a birthday cake, it needs to be cut into pieces when eating, so the coffee wine part is less than the traditional tiramisu, so as to avoid the cake body is too wet and inconvenient to cut.
