Fried with dried radish
Introduction:
"I posted a diary a few days ago. I mentioned that my friend gave me dried radish. I also mentioned that it was delicious to use this kind of dried radish to stir fry the twice cooked meat. As a matter of fact, the methods and side dishes of double cooked pork are quite diverse, but the most basic requirements are the same: the meat should be covered with skin, boiled in water until it is medium or medium cooked, and Pixian Douban should be used. The rest depends on my personal preference. I usually put some sugar in it. There are many side dishes of double cooked pork. The most classic are garlic sprouts, onions and green peppers. In addition, garlic sprouts, dried beans, carrots and cabbage can be used. This time, we used dried radish as a side dish and used few seasonings
Production steps:
Step 1: put the pork into the pot with cold water, add two pieces of ginger and a spoonful of cooking wine to remove the fishy smell, cook until it is broken, then gently poke with chopsticks to insert it, and no blood will flow out.
Step 2: dry clean radish and soak it in water.
Step 3: change the scallion, ginger and garlic to knife, remove the hair from the cooked meat skin (I have burned it with fire before cooking), and then cut it into pieces of uniform thickness.
Step 4: heat the pan to cool the oil. After the oil is hot, pour in the sliced meat and stir fry it over medium low heat until the fat is fat. Spit out the oil and roll it up. The sliced meat will appear a lamp house.
Step 5: pour in Pixian Douban, stir fry the red oil over low heat, then add onion, ginger and garlic to stir fry the flavor.
Step 6: turn to high heat, add dried radish and stir well, add a spoonful of cooking wine, appropriate amount of sugar and a spoonful of water and stir well.

You can also add dried beans, cabbage, carrots, garlic sprouts and so on. 3. The bottom oil in the pot should be less, because the fat will come out. 4. In addition to the water boiling before frying, the important reason why the meat is fat but not greasy is to stir fry it in the pot until the fat comes out of the fat, and then roll it up to show the lamp house. This step is very important. 5. Pixian Douban is very salty. If you want to add salt, you must consider it.
