Pea Cake
Introduction:
"I ate pea yellow in Beijing a few years ago. I fell in love with it once. It tastes sweet and delicate. It melts in the mouth. It's cool and refreshing to eat one in hot summer. "
Production steps:
Step 1: clean the peeled peas with water (the peeled peas will affect the dry mouth, the market did not buy the peeled peas, directly Taobao)
Step 2: add 3-4 times of water (250 grams of beans, I added about 1 l of water), soak for more than 2 hours, until foaming
Step 3: pour the soaked peas with enough water and sugar into the pot (for convenience, I cook them directly in the porridge section of the electric rice cooker), until the peas can be easily crushed with a small spoon, and then they are cooked.
Step 4: beat the cooked peas together with the water to make pea puree.
Step 5: filter the pea puree into the frying pan (more delicate after filtration, better taste)
Step 6: after boiling in high heat, turn to low heat and stir fry continuously.
Step 7: stir fry until the pea puree becomes thick. After lifting the pea puree with a shovel, the pea puree drops in large pieces as shown in the figure. After dropping, the pea puree will not immediately merge with the pea puree in the pot, but will still maintain a certain shape, and then slowly merge with the pea puree in the pot. Stir fry to this extent, it is necessary to turn off the fire immediately.
Step 8: pour the fried pea paste into the fresh-keeping box and smooth the surface. Cover the box and refrigerate for 4 hours until it is completely set.
Step 9: cut and load
