Authentic minced noodles with northwest mutton
Introduction:
"Winter is the best season to eat mutton. According to traditional Chinese medicine, mutton is sweet but not greasy, warm but not dry. Therefore, mutton has always been regarded as an important food for Chinese people in winter. Mutton saozi noodles is a famous traditional pasta in Ningxia. It is said that it evolved from the "longevity noodles" of the Tang Dynasty and became a good treat for the old people's birthday, children's birthday and other festivals, which means "longevity and longevity"
Production steps:
Step 1: mix noodles. Make the dough a little harder and put it aside for at least half an hour.
Step 2: wash the mutton leg and cut it into about 5mm dice.
Step 3: wash the tomato and cut into about 10 mm dice.
Step 4: cut the frozen tofu into about 10 mm cubes.
Step 5: dice radish, mushroom, garlic moss and green onion.
Step 6: cut ginger and garlic.
Step 7: wash and cut coriander.
Step 8: wash rape and set aside.
Step 9: soak Lentinus edodes well and cut about 5mm.
Step 10: pour oil into the pan, a little more than usual.
Step 11: when the oil is 80% hot, pour in onion, ginger and garlic and saute until fragrant.
Step 12: add mutton, stir fry, add soy sauce, appropriate amount of salt, eight mature Sheng out reserve.
Step 13: fried mutton saozi.
Step 14: put the oil in the pot, pour in the tomato and stir fry the juice.
Step 15: add frozen tofu, mushrooms, radish, stir fry a few times.
Step 16: add 1.6L boiling water to the pot, cook slightly, add soy sauce, soy sauce, vinegar and salt, and cook for about 2 or 3 minutes.
Step 17: add the fried mutton into the pot, then add the mushroom and garlic moss in turn. Turn off the fire half a minute after the water boils.
Step 18: roll the dough thin after it is ready.
Step 19: cut the dough into 3 mm wide noodles.
Step 20: cook another pot of boiling water, add noodles, cook and remove.
Step 21: blanch the vegetables and put them on the noodles.
Step 22: finally put the soup in the bowl, sprinkle with coriander and add chili oil. The delicious mutton noodles are ready!
