Production steps:
Step 1: wash the glutinous rice and soak it one night in advance.
Step 2: wash the jujube and soak it slightly to make it soft.
Step 3: wash the rice dumpling leaves several times, bring to a boil in cold water and keep boiling for about 20 minutes. Take it out and soak it in water for one night (the amount of water is less than Zongye), and take it out in advance to control the water.
Step 4: prepare small pieces of rock sugar.
Step 5: prepare to make: take a complete Zongye and fold it as shown in the picture.
Step 6: add appropriate amount of glutinous rice, 3 red dates and a few rock sugar. (sweetness is up to you)
Step 7: cover with another layer of glutinous rice and press tightly.
Step 8: keep the two ends of the rice dumpling leaves overlapped, fold them back and cover them on the glutinous rice, and be sure to press them tightly. This is the key step to adjust the shape of zongzi to ensure no rice leakage.
The ninth step: finally adjust the ends of the leaves, cut off the excess parts, and bind them with cotton.
Step 10: hot water pot, the amount of water must not be more than zongzi! After boiling, keep medium high heat for 1 hour, then turn low heat to simmer for 1 hour.
Step 11: the cooked dumplings are hot. It's better to take them out and air them before eating.
Step 12: peel off one, it's very smooth and crystal clear!

Note: the hot water for cooking rice dumplings should not be over the whole body of rice dumplings. Boiling for two hours can ensure the soft and glutinous taste of rice dumplings. If you don't eat rice dumplings immediately, you can keep soaking in the pot for about 2 hours, and it can continue to soften. Moreover, rice grains are not easy to stick to the leaves of rice dumplings!
