Production steps:
Step 1: wash, peel and slice lotus root.
Step 2: soak in water for a while.
Step 3: Chop onion, ginger and pepper.
Step 4: take a small bowl, add soy sauce, sugar, vinegar, chicken essence, salt, mix well and set aside.
Step 5: pour proper amount of oil into the pot, heat the oil and saute shallot, ginger and pepper.
Step 6: pour in lotus root slices and stir fry for a while.

Note: 1. Don't fry lotus root too long to keep its unique crisp taste; 2. Lotus root will turn black when it meets with iron, so don't fry it in iron pot.
