Production steps:
Step 1: remove the wool and wash the pig's hooves, chop them into small pieces, and soak them in white vinegar water for 20 minutes; blanch the soaked pig's hooves in a cold water pot with a little cooking wine for 10 minutes, then remove and wash them for use;

Note: 1. Soak pig's hoof in white vinegar water to remove fishy smell; 2. White pepper must be fried before it can produce fragrance; 3. Change water twice in the middle of soaking razor clam; 4. Add a piece of ginger when soaking razor clam.
