Steamed chicken with red onion
Introduction:
"Red onion (alliumas calonicum L.) originated in Palestine and was introduced into Europe during the crusade. Therefore, Holland, France and Britain are all important producing areas of red onion. Red onion is also cultivated in Asia. Red onion is also one of the indispensable ingredients to increase aroma in Chinese cooking. After shredding and exploding red onion, it is called" red onion crisp " It can be used to stir fry pork and increase aroma in soup. It is also an essential ingredient for fried eggs and zongzi. Don't underestimate this little red onion. It's more fragrant than the garlic we usually use in cooking! If you add it to chili sauce or make a dish, it will enhance the pungency and aroma of chili sauce! Red onion is full of fragrance, but its taste is milder than onion. It is often used to saute or make crispy shallot. Its fragrance is irresistible. It can also be used as seasoning sauce and cold dish
Production steps:
Step 1: cut the chicken into pieces. If you don't like the chicken skin, you can peel it. Soak the red dates in water and soften them. Cut the ginger into shreds and smash the scallions. Add the raw soy sauce, cooking wine, sugar and white pepper to the cut chicken. Marinate and set aside.
Step 2: peel and cut the red onion, put it into the oil pan and saute until fragrant, then pour the oil with the red onion into the above 1, mix with the chicken, cover and marinate in the refrigerator for about 1 hour.
Step 3: boil water over high heat, put a spoonful of cornmeal into the marinated chicken before steaming, and then put it into the steamer for steaming. Some comrades are very particular about steaming on stainless steel plates. I put them in the bowl instead of my home. However, the steaming time was a little longer. I steamed them for 25 minutes on high fire and turned them over with chopsticks in the middle. The chicken in the middle was not easy to cook. By the way, I added some raw red onions to add some flavor.
Step 4: after steaming, put some scallions in the pot.
