Production steps:
Step 1: cut the tofu into pieces.
Step 2: remove the sand line and wash the shrimps. (because the shrimps used are large, slice them in half from the back with a knife, fry them well and curl them into plum blossom shape)
Step 3: blanch the tofu to remove the beany smell.
Step 4: add a little salt and Shaoxing wine to the shrimps. Stir fry scallion and ginger in oil pan, fry shrimps and set aside.
Step 5: add tofu to the pot and simmer for 5 minutes.
Step 6: add the shrimps and cook for half a minute.
Step 7: season with salt and chicken essence.
