Stewed melon and yellow croaker

One yellow croaker (weighing about 750 grams), 25 grams of stewed melon, 25 grams of tender bamboo shoots, 25 grams of stewed melon juice, one green onion (weighing about 15 grams), 15 grams of ginger, 25 grams of Shaojiu, 2.5 grams of monosodium glutamate and 75 grams of cooked lard.
Processing steps of stewed melon yellow croaker:
Scrape the scales off the yellow croaker, remove the gills and laparotomy, remove the internal organs and wash it. Cut it into two sections from the anus of the yellow croaker. Cut the upper part three times (to the spine) and the lower part one time. Slice the stewed melon. Put the frying pan on the medium heat, stir the pan with oil, add lard and heat it to 60% heat (about 132 ℃). The yellow croaker is first boiled in boiling water, then put it into the oil pan and fry slightly on both sides. Cook Shaojiu, add 1250g boiling water, add onion and ginger (PAT loose), cover the pan tightly and cook for about 5 minutes. Remove the cover and pick up the onion and ginger. Take the yellow croaker out with a colander and put it in the pot. Put the stewed melon slices on the yellow croaker. Put bamboo shoots into the pot, add marinated melon juice, bring to a boil, remove bamboo shoots and put them into the pot.
