Raw materials for Phoenix wings:
Ingredient: one Beijing duck.

Seasoning for Phoenix wings:
Five grams of cooking wine, one gram of refined salt, 1500 grams of brine soup, 50 grams of green onion, 25 grams of ginger, 15 grams of cinnamon, 10 grams of large ingredients, 15 grams of sesame oil and 5 grams of sugar.
Steps of making Phoenix wings:
1. Put the egg yolk and egg white into two bowls and beat them up. Then add a little cooking wine, refined salt and water and mix them well. Then pour them into two flat bottomed square iron molds with oil paper. Steam them in the upper drawer and take them out. Remove the iron molds and oil paper. After cooling, they will become egg yolk cake and egg white cake.
2. Rinse 3 cucumbers with water, cut them into 2-inch sections with a knife, and then slice off the cucumber skin. Put the cucumber skin into the pot, add a little salt and marinate for 5 minutes, decant the soup, add a little sesame oil and mix well.
3. Scrape off the skin of the carrot, rinse it with clean water, cut it into two parts, put it in the basin, add a little salt, mix it for 10 minutes, decant the soup, add a little sesame oil and mix well.
4. Wash 1 cucumber with clean water, cut it into two parts, put it in the basin, add a little salt and marinate for 5 minutes, decant the soup, add a little sesame oil and mix well.
5. Open the duck from the tail, take out the five viscera, chop off the duck's paw, and wash away the blood with water. Pour water into the pan, put in the duck, cook 50% rotten, remove. In another pot, add marinated soup, onion and ginger, bring to a boil, then add the stuffed duck, marinate it on low heat for about 30 minutes, remove it, and coat the duck skin with sesame oil to make the sauce duck.
6. Use a knife to vertically split the back of the sauced duck, remove the duck bone, leave part of the duck skin, and cut the rest of the duck skin and meat into 1 inch and 2 minutes of silk.
7. Take 12 spoons, put a layer of sesame oil on each spoon, put one pigeon egg into each spoon, steam it in the drawer and take it out, cut it off from the side of the spoon with a knife and take out the cooked pigeon egg.
8. Cut the egg yolk cake, protein cake, fried cucumber skin and sauced duck skin into 2-inch-5-minute long strips with one end 3-minute wide and one end sharp. Use a knife to carve the yellow strips into Phoenix's mouth and claws, gold cake into Phoenix's crown and cherry into eyes. Cut the remaining Cucumber Strips and carrot strips into 5-minute comb pieces. Cut the remaining cucumber skin into four 1-inch filaments.
9. Cut the bread into two oval slices. Melt the butter with a little boiling water, put in the sugar, stir and apply on two bread holders. Put a half cherry kernel on the butter, and then put two strips of cucumber skin on both sides of the cherry.
10. Put sauce duck shreds in the middle of the big fish plate, and code them into the shape of phoenix spreading wings, then code them into feather shape with five colors, and then code the mouth, claws, eyes and Phoenix crown. Cut the cucumber and carrot into two tails, put the cooked pigeon eggs on them, and put a butter tray on the tip of each tail.

"Phoenix spreads its wings" is a Sheng Solo composed by Dong Hongde and Hu Tianquan in 1956. Phoenix was called ruiniao in ancient times. It is said that it is the king of birds, symbolizing beauty and happiness. The music adopts Shanxi Bangzi tone, uses Sheng's various playing skills, vividly depicts various beautiful postures of Phoenix, and expresses the yearning for a better life. This song won the gold medal in the folk music competition of the sixth World Youth Festival in 1957. Accompanied by pipa.
This piece is also the first solo of the Chinese mainland since the founding of the People's Republic of China. Therefore, Hu Tianquan is known as "the father of modern Sheng".
Song structure
First, the accompaniment (folk band or only Pipa) plays a free and quiet melody. Then the Sheng starts with a powerful trilogy, and then plays a long vibrating sound with the technique of exhaling the tongue, just like a phoenix whizzing its beautiful feathers and flapping its wings to fly.

In the third section, it turns to a key again. It uses the common creation techniques of folk instrumental music "Suizi" section, revolves around the central tone (Shangyin re), and through the contraction of sentence width, makes the music continue to grow and move forward. Finally, it uses the "Hulu" technique to blow out the broad and high spirited long sound, and outlines the image of the phoenix flying in the sky.
Hu Tianquan's "hutongue" technique has been used many times in performance, which greatly enriches the musical image of phoenix spreading its wings.
