Xifeng Liquor is made from local specialty sorghum, barley and pea. The fermentation pit is divided into open pit and dark pit. The technological process is divided into vertical cellar, broken cellar, top cellar, round cellar, inserting cellar and picking cellar. After distillation, the liquor is stored for more than 3 years, and then blended carefully before leaving the factory.

On September 24, 2003, the former General Administration of quality supervision, inspection and Quarantine of the people's Republic of China (AQSIQ) approved the implementation of the protection of products of geographical origin of Xifeng Liquor.

Raw material requirements
Auxiliary material requirements and treatment: sorghum is used as the raw material of Xifeng Liquor. Sorghum needs to be crushed before it is put into production. 55-69% of sorghum must pass the 1 mm standard sieve, 8-10 pieces of sorghum must not pass, and the whole grain is less than 0.5%.
After crushing, 35-40% of Daqu passed the 1 mm standard sieve, and half of Daqu failed.
Sorghum husk or rice husk is used as the auxiliary material of Xifeng Liquor, but before the auxiliary material is put into production, it must be screened and steamed to eliminate the flavor of the auxiliary material. The steaming conditions of auxiliary materials were round steam and steaming for 30 minutes. The dosage of excipients should be controlled at the lowest level, that is, less than 15% of the dosage.
