Raw materials for making seafood vinegar fish:
600g fresh fish, 5 scallions, 5 pieces of ginger, 2 tbsp shredded ginger and 2 tbsp tender shredded ginger, a little Shaojiu, pepper and sesame oil, 3 tbsp soy sauce, 2 tbsp rice vinegar, 1 tbsp sugar, 1 cup soup, 2 tbsp starch and 1 tbsp water.
Processing steps of seafood vinegar fish:
1. After the fish is treated, cut it from the bottom of the abdomen to make it into a large area connected with the back. Cut off several big bones in the middle with a knife, then spread with scallion, ginger, Shaoxing wine and pepper, and marinate for 30 minutes.
2. Soak the shredded ginger in cold water and squeeze out the water.
3. Cover the fish on the plate with microwave film, heat high for 12 minutes, take out and sprinkle with shredded ginger and scallion.
4. In a bowl, mix 3 tbsp soy sauce, 2 tbsp rice vinegar, 1 tbsp sugar and 1 cup high soup. After mixing well, add 2 tbsp starch and 1 tbsp water, mix well. Cook for half a minute. Pour on the fish and sprinkle a little sesame oil before serving.
Vinegar fish with seafood
Seafood vinegar fish is a traditional Chinese family food, which is made from seafood.
Ingredients: 600g fresh fish.
Seasoning: five sections of green onion, five slices of ginger, two tbsp of shredded green onion and tender ginger, a little Shaojiu, pepper and sesame oil; (a) three tbsp of soy sauce, two tbsp of rice vinegar, one tbsp of sugar and nearly one cup of soup; (b) two tbsp of starch and one tbsp of water.

④ In a bowl, mix seasoning (a) well, high heat for 3 minutes, then add seasoning (b) to mix well, high heat for half a minute into sauce, sprinkle on fish, sprinkle a little sesame oil before serving.
