Processing steps of Beijing sauce shredded pork:
1. Wash and shred the meat, add cooking wine, salt, egg liquid and starch for sizing.
2. Slice a little scallion, and cut the rest into shreds. Ginger slightly pat loose, with 2 grams of scallion into a bowl, add a small amount of water made of scallion ginger water.
3. Heat the pan, add the oil and heat it. Pour in the shredded meat and spread until it is eight years old. Remove the oil. Leave the bottom oil in the pan, add the sweet flour sauce and stir fry slightly. Add onion, ginger water, monosodium glutamate and sugar and stir fry. When the sugar is fried and the sauce becomes sticky, put in the shredded meat. Stir fry until the sauce is evenly wrapped on the shredded meat and then remove the spoon.

Beijing sauce shredded pork is a well-known dish, which is one of the classic representative dishes in Beijing cuisine. Pork lean meat was used as the main ingredient, supplemented by sweet flour sauce, green onion, ginger and other seasonings. It was cooked with soy sauce, one of the six unique cooking techniques in North China.

History of dishes
In the 1930s, in a courtyard about four miles northeast of the Forbidden City in Beijing, there was an old man, Chen, who came from Northeast China, and his grandson depended on each other to make tofu for a living.
Once, Mr. Chen picked out the lean pork and cut it into very thin slices. He fried it in the pan and put soybean paste. There was no flour cake and a little tofu skin. He cut it into cubes and cooked the "roast duck" just like the cat and the tiger. The Sun Tzu rolled the scallion and "roast duck" with the tofu skin and ate it. Not to mention how happy they were. The two of them had a happy Spring Festival.
When Sun Tzu grew up, he apprenticed in Quanjude and became a good cook. He often ate roast duck, but he didn't feel like eating it for the first time. Later, under the guidance of Mr. Chen, his grandson constantly improved the dishes, resulting in the Beijing sauce shredded meat with rich sauce flavor and tender meat.

1. Cut pork into shreds, add 1 tbsp cooking wine, 1 / 5 tbsp salt, 1 / 2 egg white, 1 tbsp raw meal and 1 / 3 tbsp chicken powder, stir well, marinate for 15 minutes.

Pork tenderloin 400g, dried tofu 1, egg white 1, cucumber 1, onion 50g, sweet sauce 150g, oil 30g, soy sauce 10g, cooking wine 5g, starch 3G, sugar 3G.

1. Wash and shred the tenderloin, add egg white, soy sauce, starch and cooking wine into the meat and mix well; cut the dried tofu into small cubes.
2. Add oil in the pot, heat it, put in the shredded meat, quickly slide it open, and take it out immediately after the meat turns white.

Tenderloin, cooking wine, egg white, dry starch, green onion, salad oil, tomato sauce, oyster sauce, sweet sauce, sesame oil.

1. Cut the tenderloin into 3 mm thick slices, and then cut into 3 mm wide filaments. Put into a bowl, add cooking wine, pour in half of the egg white, stir well, then add dry starch, stir well, marinate for 10 minutes.
2. Remove the green part of the scallion, only take the scallion white, wash it and cut it into 4cm long sections, then cut it in half, cut it into filaments, and put it in the plate.
3. Pour the oil into the pan and heat it to 80% heat. When the smoke comes out slightly, pour in the shredded meat and spread it quickly with a shovel. Stir fry the shredded meat until it changes color. Then take it out and set it aside.

8. Put the shredded meat into the pot and stir fry well. Let each shredded meat be covered with sauce. Then pour a little sesame oil before leaving the pot.
Cooking tips
1. The white part of the onion should be selected, because the shredded onion is eaten directly, so the kitchen knife and chopping board should be scalded and disinfected with boiling water before slicing the shredded onion.
2. The water for cooking sauce should not be too much, otherwise the pork shreds will be too thin after cooking, so it is difficult to wrap the sauce, and the taste is light.
