Steps of making soft fried fish:
1. Cut the fish into 30% thick slices, then cut them into 2-inch-long, 3-inch square strips, put them in a bowl, add the onion, ginger, Shaoxing wine, refined salt, monosodium glutamate and sesame oil, and marinate them well;

When the batter on the fish swells with hot oil and turns golden yellow, remove the oil, remove the batter residue from the outside of the fish strips, and put them on the plate.
Soft fried fish
