Development history
In 1680, the 19th year of Emperor Kangxi of the Qing Dynasty,
Zhao Cunren, Zhao Cunyi and Zhao Cunli, technicians of "yuanshenghao" liquor making workshop outside qianmenwai, invented the distillation process of pinching the head, removing the tail and taking the middle section in order to improve the quality of Shaojiu. The traditional brewing technology of Beijing Erguotou was born.
In the late Ming and early Qing Dynasties, there were many pubs in the capital. Baijiu had a history of four hundred or five hundred years in Beijing, but Zhao brothers found that the flavor of the liquor was good and bad. Sometimes it was hard to swallow, and sometimes it was too tasteless. After many technical tests, Zhao's three brothers agreed that only the wine steamed with the second pot of water had the best taste, not strong, not light, mellow and refreshing. So after repeated trials, the three brothers developed an exclusive wine making formula. Instead of the first pot and the third pot, they sold only the purest and best tasting wine from the second pot. Because of its mellow and sweet taste, the wine became popular and famous in Beijing. At that time, from the emperors and generals to the common people, they all knew that yuanshenghao's wine was the most fragrant and mellow, and was named "Erguotou" by the common people.
Beijing Erguotou traditional brewing technology has been handed down to the present day, relying on the authentic Erguotou brewing technology, which has always been taught orally by teachers and apprentices. On January 8, 2014, hongxingyuan Shenghao Museum appeared again

Enter the exhibition area of yuanshenghao original factory site
You can see the scene sculpture of the process of brewing Erguotou liquor by yuanshenghao liquor maker using traditional methods. These sculptures show the traditional brewing process of Erguotou at that time, such as koji making, koji stepping, mashing, steamer filling, distillation and storage.
Walking through the brewing scenic spot, visitors can see the old objects preserved by yuanshenghao distillery at that time, such as the lockers, wine baskets, grain storage barrels in the early period of yuanshenghao, and the old fangtuo discovered when the Red Star site was restored. If you go on, you can see Emperor Kangxi inscribing yuanshenghao on the display board. The wine used in the banquet of "qiansou banquet" held in the western suburbs is the wine that yuanshenghao paid tribute to. According to records, Emperor Kangxi once inscribed a plaque for yuan Shenghao, so there was the story of "civil servants get off the sedan chair, military officials get off the horse". Wu Yanqi, a Jinshi of the Qing Dynasty, also had a party with a group of classmates and friends when he went to Beijing to take the exam. The next exhibition area mainly shows the innovation and development of traditional brewing techniques of Beijing Erguotou liquor in Hongxing. On the eve of the founding of new China, red star developed gift wine for the founding ceremony, and officially listed Erguotou as the commodity name. In the same year, the central administration of Taxation decided to set up the experimental factory of North China liquor monopoly company, which was the predecessor of Hongxing. The experimental factory fully accepted the 12 most representative old cooking pots in Beijing. The names and seals of the 12 old cooking pots collected by Hongxing at that time can be seen in the exhibition area. Hongxing became the first to use the name of Erguotou as the product name. Since 1965,
Beijing distillery began to teach Erguotou brewing skills to the centralized management distillery. After tourists enter the site
