Production steps:
Step 1: wash tilapia again. Use kitchen tissue to clean up the dirt in the belly of tilapia, and repeatedly clean up the visceral residues and blood stains on the gills. These are the sources of fishy smell.
Step 2: marinate tilapia. Cut the fish into a proper size hole, pour in a little soy sauce, soy sauce, sorghum wine and rock sugar, spread evenly inside and outside the fish, and then let it stand for 10-15 minutes.
Step 3: garlic, ginger cut, pickled pepper chopped, scallion cut, scallion set aside. Cut the tofu into 0.5cm thick and 3cm square pieces and put it into 5% boiling brine to make it taste better.
Step 4: take out the cured tilapia and tofu, and dry the surface. At the same time, put a little oil on the two pans. After the pan is hot, fry the fish and tofu in medium heat until the two sides are golden. Remove and set aside.
Step 5: add 2 tbsp rapeseed oil, minced ginger and pickled pepper, stir fry until fragrant, then add minced garlic, bean paste and rock sugar, stir fry the rock sugar, melt slightly, add appropriate amount of soy sauce, soy sauce, soy sauce and sorghum wine, then add fish and tofu, add hot water to cover the ingredients. Bring to a boil over high heat, turn to medium heat and cover with a lid until the soup is properly collected. Remove from the pan and spread the scallions on the plate.
