Introduction:

Production steps:
Step 1: loosen the pork with the back of the knife, then cut it into strips as thick as fingers, add a little salt, cooking wine and five spice powder and marinate for half an hour.
Step 2: put a beaten egg and a proper amount of starch into the pickled strips and stir well.
Step 3: dip in the egg liquid and roll it in the dry flour. You can also use dry starch.
Step 4: heat the oil to 60% heat, turn the heat down to keep the oil temperature, add the strips rolled with dry powder and fry until yellow.
Step 5: after deep frying, drain the oil, raise the oil temperature to 80% heat, and deep fry the bottom strip twice until golden.
Step 6: add a little oil in the pan, stir fry scallion and garlic slices.
Step 7: put in the paitiao, add the right amount of salt and pepper powder and turn it evenly.
