Production steps:
Step 1: two eggplants, two tomatoes, three sheep horn peppers, one egg, starch, dry pepper, pepper amount
Step 2: peel the eggplant, cut into hob pieces, add starch and egg white (I can't make the remaining yolk at home, so I put them all in) and stir evenly (the amount of starch is enough to ensure a thin layer on the eggplant surface)
Step 3: deep fry the eggplant in the pot (you can do it at home with less oil and fry it several times). Deep fry the eggplant until the surface is golden. When the surface is hard, take it out and dry it
Step 4: pour out most of the oil of fried eggplant and leave some to start cooking: add Chinese prickly ash, dry pepper (use small fire at this time) and scallion (a small root is enough). When the Chinese prickly ash begins to turn black, skim it off together with the hot pepper and scallion, leaving only the base oil
Step 5: open a big fire, add tomatoes and hot peppers
Step 6: wait until the tomato juice softens, then add the fried eggplant
Step 7: put a small spoon of salt, half a spoon of sugar, a small spoon of chicken essence, stir fry, turn to low heat, add the lid to stew
Step 8: about 10 minutes (stir fry several times) if the salt taste is almost the same, you can get out of the pot
