Production steps:
Step 1: cut the beef into 2cm cubes, cook in boiling water for about 8 minutes, remove and set aside; cut the scallion and ginger into small pieces and set aside; peel and cut the potatoes and carrots into small pieces and set aside (soak the potatoes in water to remove starch and prevent oxidation).
Step 2: heat up the frying pan, add oil, add onion and ginger, add beef and stir fry for a few minutes after the flavor is stir fried; add soy sauce and yipinxian soy sauce in the pan, continue to stir fry evenly over medium heat; add appropriate amount of water to make sure the beef is not over high heat, and then turn to simmer for 40 minutes.
Step 3: add the diced potatoes and carrots (larger ones can be cut), and simmer for about 20 minutes. When the beef is soft and rotten and the potatoes and carrots are well cooked, add salt, stir well and turn off the heat. Delicious braised beef can be served!

Note: my choice of beef is forelegs, you can also choose roast steak with meat, so that the taste of beef will be more soft and tender.
