Steamed chicken with sea cucumber
Introduction:
"Steamed chicken is one of the famous dishes in Yunnan. It was spread among the people in southern Yunnan more than 2000 years ago. Jianshui produces a unique earthenware steamer, called "steamer", which is specially used to steam food. The method of steamer chicken is to cut the chicken into small pieces after washing, put them together with ginger, salt and scallion into the steamer and cover them well. The steamer is placed on a soup pot full of water, and the gap is blocked with emery cloth to avoid steam leakage, and then put them on the fire to cook. After boiling the water in the soup pot, the steam will gradually steam the chicken through the steam nozzle in the middle of the pot. Because the soup is condensed by steam, the flavor of chicken is less lost in the process of steaming, so it basically keeps the original flavor of chicken
Production steps:
Step 1: cut the cock into pieces and wash.
Step 2: add scallion, ginger, salt and white pepper into the bowl and marinate for 3 hours.
Step 3: put the marinated chicken into the steamer, and put the one with more bones first.
Step 4: put some scallion and ginger slices after all.
Step 5: put it in the steamer.
Step 6: steam over high heat for 1 hour.
Step 7: prepare sea cucumber in advance.
Step 8: put the chicken in the steaming pan and cover it for another hour.

Note: do not put water in the boiler, all the soup comes from the distillation process.
