Step 1: wash carrots and potatoes
Step 2: peel the carrots and potatoes and cut them into one centimeter cubes. Add water to the dough and cover it for 30 minutes to 1 hour.
Step 3: divide the dough into two parts, pour a little cooking oil on the chopping board, knead the dough and roll it into an oval shape about 0.5cm thick. Apply a little cooking oil on the surface of the cake to make the dough fully wet, cover with plastic film and wake up again for 30 minutes.
Step 4: put a little oil in the pot, add scallions and saute until fragrant. Stir fry the minced beef and pour in a little cooking wine to remove the fishy smell.
Step 5: stir the minced meat until slightly dry.
Step 6: leave a little oil in the pot, pour in diced carrot and diced potato, stir fry, pour the minced meat back into the pot and stir fry together. Add a little soy sauce, salt and chicken powder to taste.
Step 7: pour some boiling water into the pot, cover the pot over low heat and simmer until the potatoes and carrots are soft. Finally, add the starch to thicken, and then the saozi brine is ready.
Step 8: cut the dough into 1cm wide strips, grasp the two ends of the noodles with both hands, and stretch them on the chopping board.
Step 9: bring the water to a boil before stretching the noodles, then put it into a pot immediately, otherwise the noodles will stick together. After the last one of the first dough is stretched, cook it for 1 minute, remove all the noodles from the pan, and then make the next one.

Note: 1. Face with ordinary low gluten powder can, high gluten powder degree is too big, do at home is very difficult to stretch. 2. The surface that has not been stretched must be covered with plastic film to keep humidity. If the surface is dry, it is easy to break.
