Production steps:
Step 1: prepare hooves, liquor, salt, sugar, gauze and cotton thread.
Step 2: wash the hoof and arm and remove the bone.
Step 3: sprinkle some Shaojiu and rub it.
Step 4: sprinkle some sugar inside and outside the hoof.
Step 5: sprinkle some salt and rub for a few minutes.
Step 6: roll the skin of the hoof and arm outward and inward.
Step 7: bind tightly with clean gauze.
Step 8: bundle with cotton thread and put it in a well ventilated place for 15 days.
Step 9: when eating, wash away the dust with clean water and soak it for half a day.
Step 10: take the pressure cooker, put ginger, onion, put more water than the hoof.
Step 11: add wine, bring to a boil over high heat, and simmer over low heat for 40 minutes.
Step 12: open the pressure cooker and take out the hooves.
Step 13: cool down, remove the cotton thread and gauze.
Step 14: slice and plate.

Note: 1. Tie the hoof tightly. 2. Use cotton gauze or cotton cloth. 3. Shaojiu is high alcohol, don't use ordinary cooking wine. 4. The chopsticks are ripe when they are inserted.
