Sauteed Vermicelli with Spicy Minced Pork
Introduction:
"It's always been a favorite dish for me. I didn't know why this dish was called "ant on the tree" until I learned that this dish had a story. After her husband died, Dou E used her weak shoulders to take care of her sick mother-in-law. Because of the tight economy, Dou E had to go on credit. Once again, she went to the butcher's shop for credit. Because the debt had not been paid before, the butcher only gave her a small piece of meat. When she came home, Dou E had an idea. She cut the small piece of meat into pieces, then added various seasonings and green onion and ginger to stir fry the vermicelli. When she brought the dish to her mother-in-law's bed and her mother-in-law moved her chopsticks, she found that there were many black ideas on the vermicelli. She asked with a presbyopia: & quot; why are there so many ants on it? &Dou E told her mother-in-law what had happened. When her mother-in-law knew the reason and tasted it with her chopsticks, she couldn't help praising and saying that the dish was simply called "ants up the tree."
Production steps:
Step 1: soak and soften the vermicelli in cold water, and drain them. (I soak for 2 hours, then cut off the fans)
Step 2: marinate minced meat with a little cooking wine, salt and ginger for 30 minutes. Cut ginger, green onion and garlic into small pieces.
Step 3: heat the frying pan, add 3 tbsp of oil, stir fry the minced meat in high heat; after the water is dried, add the minced ginger and garlic to stir fry.
Step 4: stir fry with Pixian red oil bean paste for 2 minutes.
Step 5: add water, salt, sugar, soy sauce, soy sauce and cooking wine.
Step 6: bring the water to a boil over high heat, turn to medium heat, add the vermicelli, then stir until the soup is dry, sprinkle with scallion, and then out of the pot.

Note: 1. Fans must be soaked in cold water in advance, and drain, otherwise it is easy to stick to the pot. 2.100g fans are for 2 people. If there are many people in the family, you can increase the weight relatively.
