Shrimp noodles
Introduction:
"At the beginning of summer in Southern Fujian, there is a saying of eating shrimp noodles. In Minnan dialect, "shrimp" and "summer" are homonymous, so shrimp noodles are also called "summer noodles". In the old days, Minnan people used to eat pasta during this festival. It is said that this is to reduce summer diseases. However, it seems that people have gradually forgotten this dietary custom. Minnan people often use onion oil to stir fry vegetables and make soup, especially when they drink soup, eat noodles, rice noodle soup, noodles and porridge. This fresh and tender prawns, fresh and smooth noodles match perfectly with delicious prawns noodles, which is the practice of my husband's family in Southern Fujian
Production steps:
Step 1: fry the washed shrimp in a pan until discolored.
Step 2: make onion oil: put oil in the pot, put cold oil into the onion, open fire, oil temperature rises, the onion begins to stir fry, with a shovel constantly turn, so that the onion can be heated.
Step 3: when the scallions turn golden in the pot, turn off the fire when a circle of scallions begin to scorch, immediately pour in an appropriate amount of soy sauce, and use the remaining temperature to continue pressing.
Step 4: remove the shrimp and remove the head.
Step 5: cut tomato and cabbage.
Step 6: cut the leek well.
Step 7: heat the oil in the pan and stir fry with shredded ginger.
Step 8: add tomato and cabbage and stir well.
Step 9: add proper amount of water and cook.
Step 10: pressed noodles.
Step 11: after the water boils, put the noodles to boil.
Step 12: add shrimps, leeks and fried eggs, add soy sauce and stir well.
Step 13: stir well with salt.
Step 14: turn off the fire, sprinkle with onion oil and mix well.
Materials required:
Noodles: 400g
Fresh shrimp: 200g

Cabbage leaf: 4 pieces

Fried eggs: 2
Oil: right amount
Salt: right amount
Shredded ginger: right amount
Proper amount: soy sauce
Note: onion oil with soy sauce can enhance flavor.
