In our countryside, there is a ceramic basin with a diameter of about 40 cm. Grandma uses it every time she steams the cake. That basin can steam more than ten eggs. After steaming, as soon as the lid of the pot is opened, a strong smell of eggs comes to her nose. Grandma put it upside down on the chopping board and cut it into several pieces with a knife. I'm always the one who reaches out the fastest, even if I shiver in my hand. I'm not afraid that I can't eat it, but I especially like to eat the steamed chicken cake. When I take a bite, the hot place in the middle is really fragrant. Steamed chicken cake can be divided into two kinds, one is oily and the other is oil-free. The one I made is the same as grandma's, which is an oil-free version. Compared with baked cake, it is more suitable for children and the elderly, not greasy and not on fire. Its production process is very close to the old-fashioned cake, just one steaming and one baking. This kind of cake can be made very quickly. It only takes more than ten minutes. Production steps:
Step 1: prepare cake powder, eggs and sugar powder. (two eggs with shell, about 110g, if 100g or 120g, it doesn't matter)
Step 2: knock the eggs into the basin without oil and water.
Step 3: beat the egg beater at low speed until bubbling.
Step 4: pour in the powdered sugar.
Step 5: whisk the eggs at high speed until they are mushy.
Step 6: at this time, it is not easy for the egg paste lines dropped by the egg beater to disappear.
Step 7: pour the cake powder into the sieve.
Step 8: sift into the egg paste.
Step 9: mix up and down with a rubber scraper. (the method is the same as that of making Qifeng cake paste. Turn it up and down, and don't turn it into circles to avoid defoaming.)
Step 10: carefully pour the mixed cake paste into the container and fill it about 8%. I used a cake mold and put paper cups in it. Be careful when pouring. Don't pour on the outside of the container. If you're not sure, it's better to put the cake paste into a flower mounting bag, or use a spoon to scoop it. I'm used to pouring it directly every time.)
Step 11: put into the boiling hot water pot and steam for about 8 minutes. Be careful when opening the lid of the pan to avoid dripping water vapor on the cake. (boil the water in the pan before mixing the cake powder)
Step 12: if you don't have a special mold, you can also pour it into a small bowl of the same size. In my picture, I use a small saucer of seasoning, which is also padded with a paper cup.
