Production steps:
Step 1: add 15g sugar to 3 yolks
Step 2: keep stirring until the yolk turns light and thick. Pay attention to leave the hot water at the right time, so as to avoid the yolk boiling and granulating
Step 3: pour in 15g coffee wine (can be increased or decreased according to personal taste), and stir well
Step 4: heat the mixture until it drips. Remove the egg. Put the mixture into the refrigerator for refrigeration, and the texture after cooling is not very flowing and thick
Step 5: slip the mascarpone cheese
Step 6: first add half of the egg yolk paste, mix well, then add the other half of the egg yolk paste, mix well again
Step 7: whisk the animal cream with an electric egg beater until it reaches 8
Step 8: pour the whipped cream into the mascarpone egg paste finished in step 6, and mix well
Step 9: soak the finger biscuit in 60g coffee wine according to the shape of the cup
Step 10: put the biscuit into the bottom of the container (if it is not soaked, the finger biscuit will affect the overall taste; if it is soaked too long, the finger biscuit will not be formed, and the wine will be too heavy)
Step 11: pour the mascarpone egg paste made in step 8 and make it level with the cup (if the cup you choose is higher, you can also pour it to half the height, then add a layer of finger biscuits, and then pour the mascarpone egg paste until the cup is level). Refrigerate for more than 3 hours. Sprinkle with cocoa and sugar before serving
