Finally, I choose to use the leftover rice of overnight. I think that the leftover rice of overnight will be hard and not sticky when put into the machine. Moreover, the rice of my family is usually wetter. If I use the freshly cooked rice directly, it will affect the dough effect. Because it's the first time to cook, so I didn't dare to put too much rice. Finally, after the bread is baked, I feel that adding 10-20g more rice should be OK. In addition, I use brown sugar, brown sugar is wet, rice also contains water, so I use less water in the formula than usual. I'm not disappointed when the bread comes out of the oven. At least it looks pretty. I feel that the internal structure is OK when I cool it and slice it. The taste is not so delicious. Production steps:
Step 1: first pour the liquid (water and egg liquid) into the toaster, then pour brown sugar into any corner and salt into the other corner.
Step 2: pour in the milk powder and flour.
Step 3: top with yeast, cover with flour.
Step 4: stir a little with chopsticks until there is no dry powder, so as to avoid splashing dry powder when starting the machine.
Step 5: start the machine's "kneading" program, knead the dough for 15 minutes, stop the machine after 15 minutes, add room temperature softened butter, select the "standard bread" program, burn the color "light", weight 900 grams, start the machine to knead the dough, the kneading time of the standard program is 30 minutes.
Step 6: after kneading for 25 minutes, the machine will sound "didi", indicating that fruit can be added at this time, and then rice can be poured in.
Step 7: after the machine continues kneading for 5 minutes, the kneading stage is over, pause the machine, check that the dough has reached the complete stage, and the glove film can be easily pulled out.
Step 8: put the dough back into the bread machine barrel and start the machine for the next fermentation stage.
Step 9: fermentation to 1:49-1:48, the machine will have a 1-minute mixing exhaust stage, after mixing, stop the machine, take out the dough, press out the big bubbles with the palm, and divide it into 3 equal parts.
Step 10: knead the dough into 30 cm strips.
Step 11: fix one end of the three noodles together and braid them. Don't braid them too tightly.
Step 12: fold the two ends of the braid in half, the length of which is the same as the length of the barrel in the toaster, and then turn it over with the folded side down.
Step 13: put the finished bread into the inner barrel of the toaster, close the lid, start the machine, and enter the second engine stage. Because the temperature is low at home, I feel that the fermentation is not very ideal when I start the second engine, so I pause the machine twice. My machine has memory, and will continue to work after the pause.
Step 14: after fermentation for about 1 hour, the machine enters the baking stage. After baking, brush melted butter on the surface of bread while it is hot.

Note: I didn't wrap tin foil in the barrel. I chose the "light" color. The color of the baked crust is a little dark, but it's not hard at all. Especially after the crust is brushed with melted butter, the effect is very good. The crust is very soft. My parents don't try to brush yellow oil on the crust, but they should brush it while it's hot. If you like lighter color, you can wrap tin foil in the bread barrel, but you should choose "medium" color for baking. Light color is easy to bake. It should be noted that if I choose the "standard bread" procedure, when the weight is 750 grams, there will be a 1-minute mixing and exhaust process when the weight is 1:41-1:40, and when the weight is 900, there will be a 1-minute mixing and exhaust process when the weight is 1:49-1:48. If I choose the "standard bread" procedure for manual shaping, I must avoid this 1-minute mixing and exhaust process Cheng, otherwise the dough will be stirred up in a mess, you can use this minute to take out the dough for manual shaping. If the standard bread mode is adopted, it's better to knead the dough 10-15 minutes in advance, plus the default kneading time of 25-30 minutes. The total kneading time is 45 minutes. The dough kneaded at this time can easily pull out the "glove film", which is the best state to make a toast. Other operations can not be moved, just use the default program of the machine.
