Introduction:

The main ingredients are duck meat, soy sauce, authentic Hakka yellow wine, rock sugar and water. The others are added according to each family's preference. In small families, it's not necessary to cook the whole duck. If you buy half of it, you can easily make the delicious food of a big hotel. The secret is that I used my own black glutinous rice wine and tangerine peel. After cooking, the room is full of fragrance, which makes people move their fingers
Production steps:
Step 1: wash the bought duck and drain it.
Step 2: cut big pieces.
Step 3: peel the ginger and cut it into thick slices, peel the onion and wash the tangerine peel.
Step 4: prepare soy sauce, black glutinous rice wine, rock sugar and water (large bowl)
Step 5: put a small amount of oil in the hot pot, pour down the duck pieces, fry them over high heat, and stir fry for a while.
Step 6: keep high fire, stir fry, duck surface golden yellow, will spill a lot of oil. (stir fry for 15 minutes)
Step 7: shovel up the oozing oil, fill it in a bowl, filter it clean, and use it to fry vegetables on the same day.
Step 8: pour soy sauce (soy sauce) and stir fry.
Step 9: keep the fire high and add black glutinous rice wine.
Step 10: add water. (the amount of clean water is relatively increased, and the effect of stewing is the best.)
Step 11: pour in the rock sugar.
Step 12: add ginger slices and tangerine peel.
Step 13: stir fry with a spatula and bring to a boil. Cover the pan and bring to a medium heat for 20 minutes.
Step 14: when the sauce is half left, add the onion and stir fry well.
Step 15: cover the pan and cook until the sauce is dry. (a little more is ideal)
Step 16: scoop up and pour the remaining sauce on it.

Note: put the soy sauce without salt, there is no black glutinous rice wine, yellow wine or rice wine instead of the line. It's easier to chop and fry than to fry the whole duck in the pan.
