Cucumber with lobster sauce
Introduction:
"Douchi is a kind of condiment commonly used in Yunnan cold dishes. Its raw material is soybean, so it has high protein content and contains a variety of vitamins and minerals, especially vitamin E, which is even higher than other foods. Douchi not only has high nutritional value, but also has been used as medicine since ancient times. According to traditional Chinese medicine, Douchi is bitter, cold and non-toxic in nature. It enters the lung and stomach through channels. It has the functions of relieving exterior heat, clearing rash and detoxifying. It can treat headache due to wind heat, chest tightness and vomiting, and phlegm deficiency. Douchi also contains soybean oligosaccharides, which include the oligosaccharides in raw soybean and several oligosaccharides produced by fermentation. These oligosaccharides are also called bifidus factors. They can improve people's digestive function, improve the body's immune function, reduce the production of intestinal toxic substances, and prevent the occurrence of intestinal tumors. Studies have shown that isoflavones in fermented soybean products have higher physiological activities than those in raw soybean. Soybean isoflavones can prevent tumor, aging and senile capillary embrittlement
