Production steps:
Step 1: prepare materials: glutinous rice flour. I used water milled glutinous rice flour. Natural pigments include Monascus powder, Matcha powder, rose powder, cooked carrot paste, cooked pumpkin paste, cooked purple potato paste, amaranth juice, purple cabbage juice, etc
Step 2: first confirm whether the mold can be put into the steamer. Six small fish mold is large, you can put the steaming rack in the large-diameter pot, and put the mold on it smoothly. Then use edible oil to brush the inside of the mold carefully to remove the film
Step 3: because the bottom of the big fish mold can't be leveled, you need to find a suitable vessel to level it. Then, oil the mould with edible oil to remove the film.
Step 4: add 220 grams of milk and 200 grams of soft sugar into the milk pot, heat over medium heat, stir constantly to melt all the sugar, bring to a boil, cool off the heat for 3-5 minutes
Step 5: mix 180 grams of glutinous rice flour and 80 grams of Chengfen, sift, and slowly pour warm (about 70 degrees) milk into the flour
Step 6: stir to a fine white paste without powder
Step 7: scoop out a few spoons and mix with Monascus powder (mix with carrot puree in the same way). After the carrots are cooked or steamed, mash them into fine mud. The finer the better. You can use a blender to mash the mud, but be careful not to add excess water to avoid being too thin.)
Step 8: because the weather is colder, the amount of mixed color paste is small, it will soon solidify slightly, not like the flow of liquid. Using this feature, you can use a spoon to smear on the corresponding parts of the mold according to your own needs. For example, head, tail and fin.
Step 9: however, due to the oiling of the mold, the coloring may slip slightly, which requires some patience. If you want to be simple, you can only put a round ball of color on the back of the fish, which is also very lovely.
Step 10: finally, mix the white batter evenly and finely again, and slowly spoon it into the mold to fill the whole fish mold. When finished, put it into a steamer with hot water and steam for 40 minutes. Make sure the water doesn't boil dry. After coming out of the oven, wait for complete cooling and film removal (can be put in the refrigerator for one night)

Note: after the film is completely cooled, carefully pull it up from the tail. Small fish take off more easily than big ones.
