For a period of time, they were the exclusive tribute points of the court. Later, some imperial chefs returned home and brought the snacks to the people. During the reign of Nurhaci, the emperor of the Qing Dynasty, soldiers liked to eat sticky bean buns and bean flour cakes. These two kinds of pasta were made of yellow sticky rice, jiangmi and soybeans. Yellow sticky rice, jiangmi and soybeans were the specialties of Northeast China, and their heat was much higher than that of ordinary food. What won the favor of soldiers most was that they were not hungry and had a strong sense of satiety. It is said that the batulus, who were brave and used to fighting under the Eight Banners in the Qing army, only needed a big meal a day to drive their horses to battle. They were invincible wherever they went. After eating sweet sticky food, they had great strength in both arms. They could pull a hard bow and wield a heavy sword to win the first rank of the general among thousands of troops. The brave Qing army finally defeated the Ming Dynasty. It can be seen how important the energy rich food was in the cold weapon era, so it was spread to later Manchu people that they liked to eat sticky and sweet food. Although the method of making bean flour cake is simple, it needs to work hard to knead the steamed dough until it is full of stickiness. It is not like people's imagination that the steamed dough can be rolled with stuffing. Water should also be in place for mixing flour. More water will make the dough too soft and difficult to form. Less water will taste bad and will harden in a short time. Generally, the amount of water used to make this kind of snack is 500g, and 650 g of water is needed for flour. Jiangmi flour or glutinous rice flour is very draughty. It is different from ordinary wheat flour. As long as the amount of water is well controlled and the steamed dough is kneaded in place, it is actually very simple to make. Today, I have made two kinds of small dots. One is the traditional method of donkey roll, which uses soybean flour when kneading, and the other is made of coconut, which is mixed with sweet scented osmanthus stuffing. Production steps:
Step 1: stir fry the soybean noodles with low heat.
Step 2: after frying, spread out the bean noodles to cool and set aside.
Step 3: start mixing noodles with 30 ℃ warm water.
Step 4: after mixing the dough, place it in the wet drawer cloth and fold it at the four corners, so that it is easy to breathe when steaming.
Step 5: pack the dough and put it into the cage.
Step 6: cover the pan and steam over medium heat for 35-40 minutes.
Step 7: after steaming, take out the steamed dough and air it slightly until it is slightly hot, then knead it with cloth.
Step 8: when the dough is kneaded until sticky, remove the drawer cloth and wash it with cold boiled water.
Step 9: after washing the drawer cloth, put the dough on the drawer cloth again to continue kneading.
Step 10: until the viscosity and muscle strength of the dough are kneaded out, use your thumb and index finger to pick up the dough and make it fall naturally. If it can reach about 10 cm, the dough will be kneaded continuously.
Step 11: at this time, the kneaded dough will be very sticky. Sprinkle the fried soybean flour on the chopping board, put the dough on it and knead it for a while, then the dough will not stick to your hands when dipped in soybean flour.
Step 12: then flatten the dough into 1 cm thick pieces by hand.
Step 13: apply bean paste stuffing on the flat dough.
Step 14: spread the bean paste on the dough and roll up the dough from one end.
Step 15: after rolling, gently stretch the roll with your hand, and the diameter is about 3.5-4cm.
Step 16: after rolling, use a knife to cut into sections at an interval of 3cm. During the operation, sprinkle the bean flour evenly to make it not stick to the hand and chopping board.
Step 17: after cutting, the code plate can be served while it is hot.
Step 18: another donkey roll uses coconut instead of bean flour, and uses soft white sugar and a little sweet scented osmanthus sauce instead of bean paste filling. The method and technique are exactly the same. Because the coconut is lighter, only 20-30g of coconut is needed. Mix the soft white sugar in 100g of soft white sugar and 10g of sweet scented osmanthus sauce, then sprinkle it on the dough and roll it up.
