Production steps:
Step 1: yeast a + a small amount of warm milk flower B 2 eggs (a little more) break up + oil (estimated to be 10ml) mix C flour, baking powder, sugar, salt, and then + A + B + milk to make a dough. At this time, the dough will be very sticky and the surface is not smooth. But to adhere to knead down, do not easily add flour. Kneading, the dough will gradually become elastic, the surface will become smooth, and with the formation of gluten, the dough will become less sticky. Kneading noodles is a hard work. In order to produce enough gluten, we have to put a lot of effort into kneading. My poor wrist is still painful today_
Step 2: then fermentation. Due to the low temperature, it took about 3 hours to ferment the dough to 2-2.5 times the size. Dip your fingers in the flour and poke a hole in the dough. The hole will not retract.
Step 3: after the first fermentation, we need to reduce the weight of the dough. Exhaust the fat dough and let it "thin" again. Then, divide it into the required size and knead it into smooth small balls for intermediate fermentation. It's about 20 minutes. After the intermediate fermentation, we can shape the dough into the desired shape for the second fermentation
Step 4: the second fermentation (also called final fermentation) is generally required to be carried out at about 38 ℃. In order to keep the surface of dough from losing water, the humidity should be more than 85%. In order to maintain this temperature and humidity condition, arrange the dough on the baking plate, put it in the microwave oven, put a plate of boiling water at the bottom of the microwave oven, and close the door of the microwave oven. Water vapor will create the required temperature and humidity in the closed space of microwave oven. The final fermentation time is about 40 minutes. Ferment until the dough is twice as large.
