Sesame oil White Sufu

Production steps:
Step 1: buy fresh old tofu, drain water, cut tofu into 2-3cm square pieces, and put it in a carton with clean corn leaves or straw (steamer or bamboo sieve is also acceptable). Cover it with a few more layers of corn leaves.
Step 2: put tofu for about one to two weeks, then Mucor will grow and the surface of tofu will be soft, then Sufu can be processed. Or according to the growth of Mucor to determine the end time of Sufu Fermentation.
Step 3: mix salt, pepper powder and pepper powder according to your preference.
Fourth step: the whole bean soaked with the best tofu in the high baijiu.
Step 5: add salt, pepper powder, pepper powder mixture, sprinkle the powder on tofu with a small spoon to make it evenly wrapped with seasoning on all sides.
Step 6: store neatly in a clean jar or fresh box. It is best to use glassware or ceramic or tile products for preservation.
Step 7: after a few days, pour in a proper amount of sesame oil to submerge sufu. Seal the container and take it as you like. If you don't like too much sesame oil, you can heat up some corn oil, cool it, mix it with sesame oil, and pour in sufu.
Step 8: finished product.

Note: 1) tofu needs to be placed in multiple layers, and there should be a gap of more than 2-3cm between the upper and lower layers. 2) The side of bean curd and the contact surface of carton or other containers should also be covered with corn leaves to prevent water evaporation. Then cover the bean curd with corn leaves and place it in a cool place. 3) If you don't have corn leaves, you can use straw, wheat straw or rice dumpling leaves.
