Production steps:
Step 1: Hot seed dough: 75g high flour, 53g water, 6G sugar, 30g butter. Main dough: 225g high flour, 35g white sugar, 3G salt, 12g milk powder, 4G yeast, 30g whole egg liquid, 110g water. Blanching method: put water, sugar and butter in a pot to heat, do not boil, water bubbles on the cease-fire, and then pour in high powder, stir into dough. After cooling, cover and refrigerate. I usually do seed scalding the first day and take it out the next day when I have time, so I don't feel any difference when I refrigerate for several to twenty hours. I can't help it. Rookie + nerve is rough. It's really hard to have any experience.
Step 2: break the hot seed dough into small pieces and put them together with the main dough. Add water little by little. Feel that the moisture of the dough is almost enough. Knead. After the main dough is kneaded and smoothed, about 1 / 4 of the dough is put aside and covered with plastic film to prevent water loss. The remaining 3 / 4 dough is kneaded and beaten to form a film, and then shaped and put into the basin for fermentation. Mix 1 / 4 dough with 1 / 2 teaspoon bamboo charcoal powder, knead to form film, shape and ferment
Step 3: the first fermentation of the two dough is completed. When making noodles, I mixed some stuffing with meat floss and white sesame. The bread with meat floss stuffing had enough heat, so I didn't use butter to mix the stuffing.
Step 4: divide the main dough into five equal parts after venting, roll it round slightly, cover it with plastic wrap and leave it for 10 minutes.
Step 5: roll the small dough into skin one by one, turn it over, and wrap it in minced sesame stuffing.
Step 6: wrap the stuffing of the bread and place it on the tin foil covered baking tray. Then press it flat and cover it with plastic wrap.
Step 7: I made five pandas, so the bamboo charcoal dough was divided into 10 ear dough, 10 eye dough and 5 nose dough. This is my first time to do it, so I don't have a concept of the weight of small dough. The size of these dough depends on the feeling. There is only one rule: the ears are the largest, the eyes are the second largest, and the nose is the smallest.
Step 8: knead the ear dough into an oval shape with a little sharp on both ends, brush water on the panda's head with a brush, and then stick the ear on it; knead the eye dough into a big round shape with a small one, and then stick it flat on the panda's face. Finally, knead and pat the nose dough, and stick it on the face with water. I thought I had finished this step. It seems that something is wrong. Yes, these pandas have no eyes. Ah, they are careless. No way, had to pinch point in each white dough down to do white eyes, and then pinch point down from the nose to do black eyes. The same way is to "rub, pat, brush with water, and then stick on.". The order of pasting the whole eye is "big black white small black".
Step 9: after the second fermentation, preheat the oven at 200 ℃ and bake at 180 ℃ for 20 minutes. When it's out of the oven, brush the melted butter while it's hot. Just a little is enough.
