Braised chicken wings with rock sugar
Introduction:
"It's easy to cook chicken wings with rock sugar. It's children's favorite."
Production steps:
Step 1: wash and drain the chicken wings. Soak in cooking wine, 1 tbsp soy sauce and a little garlic powder (if any) for more than two hours. If time is not enough, soak the surface cutter for 30 minutes. In the middle, turn over the chicken wings and continue to soak.
Step 2: Chop garlic and ginger, and reserve a can of coke (or water).
Step 3: put a spoonful of crushed rock sugar in a flat bottom non stick pot, or put a little oil, and slowly boil the sugar over low heat until it changes color.
Step 4: spread out the sugar juice, fry the chicken wings over low heat until discolored, then turn over and continue to fry. Pay attention not to be too black and scorched
Step 5: after frying on both sides, push the chicken wings to the edge of the pot temporarily, put ginger, garlic and star anise in the middle, stir fry with medium heat, and then pour the sauce soaked in chicken wings into the pot, stir fry with high heat for about half a minute.
Step 6: then pour in coke or water, with chicken wings as standard, add half tbsp of soy sauce, cover and simmer for 20 minutes.
Step 7: stir fry over high heat for 3-5 minutes, add half a bowl of starch and continue to fry until the juice is collected. Sprinkle with scallions (big or small, green) and you can get out of the pot.
Step 8: control the dry consistency of the soup when it comes out of the pot, and don't fry it. This photo is a bit dry because I have to cook and take it by myself. It doesn't sell very well, but it's very delicious!

Note: 1) the temperature and uniformity of rock sugar fried chicken wings is very important, because the fire is small, so you should take the pot and turn the chicken wings evenly fried. 2) The amount of rock sugar depends on my taste. I didn't put too much myself. 3) If you like the chicken wings more rotten soft friends, you can simmer the time for another 5 minutes.
