Introduction:
"Although I haven't been to many places to travel, my biggest interest in a place is to understand some local customs and taste local special food. This food, it does not need beautiful shape, do not need high-end swing plate, it can be the entrance of the alley, can be a roadside stand, can also be a shoulder load of goods. Even an "old" bowl and a pair of "shabby" chopsticks are soaked with "delicacy". No matter sour, sweet, bitter, spicy, salty, fragrant, astringent, each flavor has its own irreplaceable aftertaste. It's a unique way to eat small intestine with green onion. It's sweet and delicious. It's very popular among people in Southern Fujian. Maybe, it's not your "dish", maybe, you will like it as much as I do
Production steps:
Step 1: after cleaning the front side of the small intestine, turn out the back side, first wash it twice with water, then put it in a large basin, add an appropriate amount of edible oil and dry starch (at this time, the basin does not add water), keep scratching and washing, a lot of viscous substances will be washed out, wash it with water. Repeat this three to four times. Then flush the small intestine to the front of the faucet. (because when you wash the reverse side, if you keep scratching and washing, it will definitely leak into the small intestine).
Step 2: clean the scallion and control the water.
Step 3: wash the small intestine thoroughly, turn it back to the front, and start pouring scallions about 2 cm away. (because there's a place to tie the knot at the back)
Step 4: pour the scallion into the small intestine. (here I actually poured in three green onions. For better demonstration, I only used one in Figure 3.)
Step 5: after pouring in a section, connect the onion in time. All the time, and then pour it down.
Step 6: fill it all.
Step 7: fill the small intestine and tie up the four heads with clean cotton thread.
Step 8: put it into the pot, add the right amount of water, and add the right amount of salt according to your taste.
Step 9: cover and bring to a boil. Turn to low heat and cook for about 1 hour.
Step 10: add appropriate amount of white radish slices. (it doesn't matter whether it's added or not, it has nothing to do with filling onions)
Step 11: continue to cook for about 20 minutes until cooked, add a little chicken essence. (chicken essence may not be added)
Step 12: before eating, hold chopsticks in your left hand and pick up the small intestine, cut it into sections with kitchen scissors in your right hand and then serve it.

Chicken essence: appropriate amount
The small intestine must be cleaned. And do not add salt to wash the small intestine when cleaning it. The small intestine washed with salt will taste a little bitter. 2: When cooking, if you add some spareribs, the soup will taste better. 3: Onion is not the kind of thin chives, but larger, sweet taste of the kind of onion.
