Tomato pimple soup
Introduction:
"My mother is from Shandong. When I was a child, I used to make pimple soup, but I didn't like it at that time, because there was no seasoning or vegetables in the pimple soup made by my mother, which was so clear and light. Maybe, for mother, that's the taste of hometown. It has been 20 years since I left my home in Urumqi. It seems that from the day I left, there was no image of Geda soup in my memory. Over the years, I have forgotten that there was such a staple food in my happy childhood: Geda soup. Until a few days ago, when browsing the food on the Internet, I suddenly saw the word "Geda soup", I suddenly thought of this familiar and strange name. Geda soup, which I made is different from my mother's, with tomatoes, eggs and scallion oil added. It tastes fragrant. Cooking, like being a person, always needs some changes, doesn't it? Next time I go back to Urumqi, I'll make pimple soup. My parents will like it. "
Production steps:
Step 1: put the flour in the basin, turn the water from the tap into a thin line, put the flour under the tap, and stir it with chopsticks quickly and evenly while taking the water, so as to form small lumps. Tips: tap water, put noodles under the water, stir them with chopsticks at a uniform speed. The water flow and stirring speed are uniform. The size of pimples is the same. The size of soybean is the best
Step 2: let the formed pimple stand for five minutes, then stir it with chopsticks. (Tips: stir the dough for five minutes, let the flour and water fully absorb, and then stir it with chopsticks. It will make the dough pimple strong and delicious.)
Step 3: dice the tomato, cut the scallion horizontally, and then cut the egg into half spoon cooking wine, half spoon water, and a few drops of vinegar. (cooking wine can remove the smell of eggs, water and vinegar can make the eggs tender, but not more.)
Step 4: stir fry scallion oil: add oil into the pot, add scallion under low heat, when the scallion is slightly yellow and fragrant, take out the scallion, and then pour out half of the scallion oil.
Step 5: heat the remaining scallion oil in the pan, add diced tomatoes and stir fry until the juice is out.
Step 6: stir fry a spoonful of tomato sauce and a spoonful of delicious soy sauce. (tomato sauce can remove the sour and astringent taste of tomatoes, which is extremely delicious and fresh with soy sauce.)
Step 7: add water and bring to a boil.
Step 8: bring to a boil the pimples and add some salt. (generally, soybean sized dough lumps are put into boiling water and almost cooked when they are boiled again.)
Step 9: slowly pour the egg liquid into the boiling place to form egg flower. Pour in the scallion oil before pouring. If you like, add some chicken essence. (the egg liquid should form a trickle and slowly pour into the boiling place, so as to form a beautiful egg flower.)
