Production steps:
The first step: peel and rinse the potatoes and cut them into the water. Soak in a spoon of white vinegar in the water. (fried potatoes soaked in vinegar will be more crisp. I changed the water twice and then mixed in the white vinegar.) Cut green onion, millet and pepper into rings.
Step 2: put water into the pot and bring to a boil. Take out the boiled potato shreds and immerse them in cold water. (if you stir fry without blanching, it will not taste good, but it may also be raw.)
Step 3: add hot pepper and scallion oil.
The fourth step: pour the potatoes into the water and stir fry the potatoes. Stir in the salt and turn to a 1 to two spoon of white vinegar before the pot starts.
