Production steps:
Step 1: this time I bought a big fat fish of more than 2 jin. The stall owner said it was Sanhua fish. I don't know exactly what kind of fish it is, but the meat is very tender and there are not many spines. It's very delicious.
Step 2: cut a knife at the back of the gill, you can see a small white spot, gently pull out, this is fishy line.
Step 3: clean up the fish and cut a little deeper along the middle spine so that it can be spread out for a while.
The fourth step: put salt on fish, a little Baijiu, and add onion, ginger and garlic to pickle.
Step 5: at this time, prepare the ingredients, cut the potatoes into pieces, slice the onion, cut the peppers into sections, and wash the cabbage.
Step 6: after marinating for 10 minutes, coat the fish with oil, cumin powder, chili powder and ginger powder. Spread oil paper or tin foil on the baking pan. Spread the fish flat on the baking pan.
Step 7: put the fish in the oven, put in the middle layer, and bake at 200 ℃ for 20 minutes.
Step 8: the fish is roasted over there, and the side dishes are made here. Add the oil in the pan, stir fry the pepper and red pepper until fragrant.
Step 9: add pepper and onion to stir fry. In fact, I found that it would be better if the onion was not stir fried and put into the baking tray directly. You can choose your own method.
Step 10: add potatoes, stir fry, and then add a little soy sauce, stir fry until the potatoes become golden.
Step 11: add the right amount of water and then add the cabbage to cook together. Finally, add the secret weapon pickled pepper and stew for a while.
Step 12: when the fish is almost baked, you can stop for a while and brush a layer of oil. If you like, you can brush some garlic chili sauce, sprinkle cumin and chili powder.
Step 13: pour the fried side dishes on the fish, don't have too much soup, and then bake in the oven for 10 minutes.
Step 14: roast the fish! Finally, put coriander on the pot.
