Noodles with garlic
Introduction:
"The memory of garlic dipped noodles comes from my childhood hometown. Still remember every hot summer, I dip in garlic juice to eat the bowl of garlic noodles made by my grandmother, not to mention how fragrant. Garlic dip noodle inherits one of the characteristics of Shaanxi pasta: "white, thin, smooth, oily and spicy". Moreover, garlic dip noodle fully and truly reflects one of the eight folk customs in Shaanxi that "noodles are like trouser belts"
Production steps:
Step 1: take an appropriate amount of flour (add or subtract according to the number of people eating), and then add water to the flour slowly while stirring the flour into flocs.
Step 2: knead the flour with water into a smooth dough. Cover the dough with a half wet steaming cloth and wake up for more than half an hour. The longer you wake up, the stronger the noodles are~
Step 3: after the noodles wake up, roll them into a wafer. Don't roll it too thin.
Step 4: then cut into two finger wide pieces with a knife.
Step 5: roll thin and wide one by one with a rolling pin.
Step 6: stretch each noodle by hand before putting it into the pot, and the strength should be even. Add two or three times of water in the middle of the noodles. Add some vegetables with the pot. Put the cooked noodles in a cold bowl.
Step 7: let's look at the making of garlic juice: prepare 2-3 heads of garlic, wash and chop.
Step 8: according to personal taste, add appropriate amount of chili noodles, a little soy sauce, salt and vinegar.
Step 9: cut appropriate amount of scallion or garlic and put in. Heat the right amount of oil, warm the oil slightly, then pour in the garlic juice. At this time, garlic smell.
