Stewed north and South
Introduction:
"Stewing the north and the South" -- a dish appeared in the fifth episode "meeting" of "tip of the tongue 2". "Stewed north and South" is a traditional dish in Zhangjiakou City, Hebei Province. It is mainly made of mushrooms from northern part of the Yangtze River and bamboo shoots from southern part of the Yangtze River. Tricholoma is a famous specialty in Hebei Province. It is rich in Bashang grassland in Zhangjiakou, so it is called Tricholoma. The aroma of Tricholoma is long-lasting and its meat is thick. It is the best among edible fungi and is known as "the meat of vegetable"
Production steps:
Step 1: raw materials: bamboo shoots, mushrooms, green pepper, ginger
Step 2: wash the mushrooms and soak them in boiling water for one hour
Step 3: slice bamboo shoots, mushroom, green pepper and ginger
Step 4: put water in the pot to boil, and then add bamboo shoots to blanch
Step 5: blanch mushroom
Step 6: heat the oil in a pan, add ginger slices and star anise to make it smell, and then remove the star anise and ginger slices
Step 7: add bamboo shoots and mushrooms
Step 8: add cooking wine
Step 9: add in the old sauce and stir fry it
Step 10: pour in the clarified water to soak the mushrooms
Step 11: add green and red pepper, stir fry and cut raw
Step 12: add salt
Step 13: add sesame oil
Step 14: finally, change the water, thicken the starch and put it on the plate
