steamed spareribs with rice flour
Introduction:
"This mother's specialty, steamed spareribs with flour, is made by traditional technology. Pepper, star anise and cinnamon are fried together with rice, and then ground into rice flour. The spareribs are pickled in advance to make them taste stronger. The dishes are beautiful in shape, fragrant in glutinous rice, spicy and tender, and the ribs are soft and rotten
Production steps:
Step 1: wash the spareribs several times with warm water and soak for 20 minutes to remove the blood.
Step 2: prepare pepper, star anise, cinnamon, scallion, ginger slices, Sufu juice, and chop Pixian Douban.
Step 3: set the pot on fire, add rice, large ingredients, Chinese prickly ash and cinnamon, stir fry over low heat until light yellow.
Step 4: beat jiangmi, Zanthoxylum, star anise and cinnamon together to make rice noodles with spices.
Step 5: add oil in the pan and stir fry Pixian Douban when it is 40% hot.
Step 6: stir fry until crisp and fragrant, then pour into a small bowl.
Step 7: remove the ribs and pour in the cooking wine.
Step 8: add salt.
Step 9: add onion and ginger.
Step 10: transfer the rotten milk.
Step 11: pour in the soy sauce.
Step 12: pour in the fried Pixian Douban.
Step 13: add 1 tbsp of water or stock, stir well, marinate for 20 minutes, make it tasty.
Step 14: marinate the spareribs with rice flour.
Step 15: put into the steamer in turn.
Step 16: bring to a boil and steam for 40 minutes.
Step 17: remove the onion and ginger and garnish with coriander.
Materials required:
Ribs: 400g
Jiangmi: right amount
Soy sauce: 10 grams
Cooking wine: 10g
Sufu juice: 5g
Pixian Douban: 15g
Onion and ginger: 10 grams each
Chinese prickly ash: 5g
Star anise: 2G
Cinnamon: 2G
Coriander: moderate
Salt: right amount
Soup or water: 15g
Note: do not grind rice flour too fine. When marinating spareribs, you can also directly put in rice noodles to marinate together. Rice noodles can't be used up at a time, so it's the same delicious to steam rice noodles and steamed meat.
