Production steps:
Step 1: wash the shrimp, do not remove the head, pick out the shrimp thread from the second section of the shrimp back with toothpick, cut off the long beard, add cooking wine and mix well, wait for about 10 minutes (shrimp with medium size can be used, too large shrimp shell will be too hard), and then wipe off the excess water with kitchen paper
