Braised eggplant with soybean
Introduction:

Production steps:
Step 1: shell the soybeans, wash them and drain them.
Step 2: wash the eggplant and cut it into long pieces.
Step 3: slice the garlic, shred the ginger and cut the scallion into sections.
Step 4: heat the pan and pour in the eggplant.
Step 5: stir fry until soft.
Step 6: add oil to the pan, pour in ginger and garlic and saute until fragrant.
Step 7: add the fried eggplant and stir fry for about 1 minute.
Step 8: pour in the soybeans and continue to stir fry until the soybeans are discolored.
Step 9: pour in a little Taiwanese rice wine.
Step 10: add Jinlan soy sauce and stir fry for about 2 minutes.
Step 11: add salt.
Step 12: add sugar and stir well.
Step 13: Sprinkle with scallion.
