Production steps:
Step 1: first cut the tofu into small pieces and put it in the cabbage seed to filter out the water in the tofu.
Step 2: wash the scallions and chop them.
Step 3: wash pork, cut into small pieces and set aside.
Step 4: take part of the fat pork, refine the oil, and prepare the fat meat after refining the oil.
Step 5: chop the scallion and pork (including the fat after refining oil), and finally add the right amount of salt and a little oyster sauce to mix well.
Step 6: make the meat.
Step 7: crush the dried tofu.
Step 8: spread a layer of tofu in the palm of your hand, with moderate thickness.
Step 9: put meat stuffing (don't put too much meat stuffing, too much, the tofu is too big).
Step 10: wrap the whole meat in tofu, and then turn it back and forth on two palms for several times (just like when we get the tea egg just out of the pot, it's too hot, so we roll it back in the left and right palms).
Step 11: make the tofu round as evenly as possible.
Step 12: the size of tofu is decided by the amount of meat stuffing, which can be made according to your own preference.
Step 13: heat the pan, pour in the oil. After the oil is hot, gently put the tofu round into the pan and fry it over low heat (like the temperature of tofu).
Step 14: turn over and fry until golden. (in the process of turning, be sure to turn it carefully)
Step 15: when both sides are golden yellow, put a little water on it, cover the pot and keep it stuffy for about 8 minutes until it is cooked (during the stuffy process, pay attention that the water in the pot should not be dry, so as not to paste the pot).
Step 16: start the last one. This dish is from my hometown, which is eaten by almost every family during the Spring Festival. It means round and round.

Note: filtering time is about 40 minutes, too much water in tofu will affect the following steps.
