Fat but not greasy Mao's braised pork
Introduction:
"Mao's braised pork is made of half lean and half fat pork, cut into symmetrical shapes, and then baked with a little sugar in top-grade soy sauce. It is golden in color and tastes sweet but not greasy. At that time, Mao family's restaurants all over the country used braised meat as their signature dish, so it was called "Mao's braised meat". The authentic Maoshi braised meat doesn't add soy sauce, because Chairman Mao doesn't eat soy sauce in his life. When Chairman Mao was a child, his father opened a soy sauce making workshop. At that time, the conditions were very poor. He witnessed the process of making soy sauce with his own eyes, produced some reactions, and then stopped eating soy sauce.
