Production steps:
Step 1: wash grass carp strips and drain.
Step 2: cut the fish into thick slices, drop in Shaojiu (a bottle of cap), add 1 tbsp refined salt, 1 tbsp chicken powder and 4 tbsp starch to marinate.

Step 4: pour the peanut oil into the pan and heat it to 80%.
Step 5: heat the oil and fry the salted fish slices lightly.
Step 6: deep fry until the fish is golden, then remove and control the oil.
Step 7: because there's no sweet and sour sauce bag, I've learned to make sweet and sour sauce with tomato sauce.
Step 8: put a little peanut oil in a hot pot over medium low heat, pour in 5-6 tbsp of tomato sauce (see how much fish is added), add in half a bowl of high soup (just make soup at night), add in 3 tbsp of sugar and 3 tbsp of rice vinegar, stir together to make the sauce mix, try the taste, add salt if it's sweet, and vinegar if it's not sour.
Step 9: after the sauce taste is suitable, pour in the fried fish fillets and stir fry over medium heat.
Step 10: stir fry carefully and evenly with sauce (grass carp is not easy to stir fry, easy to break open), stir fry until the sauce is tight, wrap the fish fillets, and then put them out of the pot.

Note: if you have sweet and sour sauce bag or sweet and sour sauce, it will save time to make. After frying the fish, you only need to mix the soup with the ready-made sauce, boil it in the pot, and then mix the fish well. After eating this plate of sweet and sour fish, my husband commented that this dish is just fried fish with sweet and sour sauce. The sweet and sour taste doesn't enter the fish. It's only on the surface, just like dry fried fish with sweet and sour sauce ~ ~ ~ I've been taught. If I make this dish again next time, I will improve it.
