Liuliu Dashun: Stewed Platter
Introduction:
"Cold noodles" is the topic of group B: good luck, Liuliu Dashun, gold and silver, good luck. This dish consists of six ingredients: bean curd, dried bean curd, quail eggs, money belly, pig ears and bamboo shoots. These kinds of ingredients have corresponding auspicious words, which are common ingredients on the new year's table. Tofu is homonymous for "Fu", implying that new year's happiness is coming. The homonym of dried tofu is "rush to happiness", implying that happiness has come. Quail egg means "peace", wish you good health and peace. Money belly is very intuitive on behalf of money, that is, money rolling. Pig ears are often eaten during the Spring Festival, representing Shunfeng and Shunyi. Bamboo shoots with "Shun" means that everything is going well in the coming year. Six ingredients are put together, and six auspicious dishes represent "Liuliu Dashun". Production steps:
Step 1: prepare all the materials and clean them.
Step 2: put money belly, pig ears and bamboo shoots into the pot.
Step 3: add the fragile tofu, quail eggs and dried tofu.
Step 4: put all the dry ingredients in the seasoning bag.
Step 5: put the seasoning bag into the pot.
Step 6: add soy sauce to the pan.
Step 7: add a veteran.
Step 8: add sesame oil.
Step 9: add cooking wine.
Step 10: add rock sugar.
Step 11: add appropriate amount of water.
Step 12: finally add the brine.
Step 13: the amount of water is not more than the material.
Step 14: add onion, ginger and garlic.
Step 15: bring to a boil over high heat, turn off the heat and simmer for a few hours.
Step 16: remove all marinated materials.
Step 17: after all kinds of materials are cooled, slice or silk, and swing the plate.
Step 18: put together six groups and decorate them with colored peppers.
