Production steps:
Step 1: prepare the materials.
Step 2: add oil to the hot pot, and add the tofu pieces.
Step 3: fry the tofu over low heat until the tofu is golden and crisp.
Step 4: drain the excess oil.
Step 5: remove the head, shell and thread of prawns.
Step 6: marinate with cooking wine and starch for 5 minutes.

Note: the choice of tofu: North tofu or North tofu, also known as old tofu, hard tofu. It refers to the bean curd made with bittern as coagulant. Its hardness, elasticity and toughness are stronger than those of Nan tofu, and its water content is lower than that of Nan tofu, generally between 80% and 85%. When it is used for frying, its shape is more beautiful and its taste is more fragrant than that of Nan tofu.
